Lemon Roasted Asparagus
Asparagus is one of our healthier vegetables, so when paired with lemons -- Wow! A super easy and highly nutritious accompaniment to nearly any meal, or even enjoyed as an appetizer or alone.

- 1 pound fresh asparagus trimmed and shaved
- 2 tablespoons extra virgin olive oil
- 2 cloves garlic minced
- 2 tablespoon parmesan grated
- 1 lemon thinly sliced
- 2 tablespoons lemon juice freshly squeezed
- 1/2 teaspoon sea salt
- 1/4 teaspoon ground black pepper
Preheat oven to 400 degrees and line a rimmed baking sheet with parchment paper.
Add the asparagus, lemon slices, olive oil, freshly squeezed lemon juice, sea salt, ground black pepper, minced garlic and parmesan to the baking sheet.
Toss evenly to coat.
Place in the oven and roast 8-10 minutes or until the asparagus is crisp on the outside and tender in the center.
