Lemon Roasted Asparagus

Asparagus is one of our healthier vegetables, so when paired with lemons -- Wow! A super easy and highly nutritious accompaniment to nearly any meal, or even enjoyed as an appetizer or alone.

  • Rimmed baking sheet

Ingredients
  

  • 1 pound fresh asparagus trimmed and shaved
  • 2 tablespoons extra virgin olive oil
  • 2 cloves garlic minced
  • 2 tablespoon parmesan grated
  • 1 lemon thinly sliced
  • 2 tablespoons lemon juice freshly squeezed
  • 1/2 teaspoon sea salt
  • 1/4 teaspoon ground black pepper

Instructions
 

  • Preheat oven to 400 degrees and line a rimmed baking sheet with parchment paper.
  • Add the asparagus, lemon slices, olive oil, freshly squeezed lemon juice, sea salt, ground black pepper, minced garlic and parmesan to the baking sheet.
  • Toss evenly to coat.
  • Place in the oven and roast 8-10 minutes or until the asparagus is crisp on the outside and tender in the center.
