Instructions
Bring 1/4 cup water and sugar toboil in a small saucepan, stirring until sugar is dissolved. Let cool completely and then refrigerate, covered, at least one hour and up to a month.
Puree celery, cucumber and 1/2 cup simple syrup in a blender until smooth. Pour mixture through a fine-mesh sieve over a medium bowl.
In a cocktail pitcher, combine celery/cucumber syrup, lime juice and gin. Fill tumblers halfway with ice, pour 3 ounces of cocktail base into each glass. Top off with lime seltzer. Garnish with your choice of accompaniment.
