Sparkling Cucumber & Celery Gimblet

Ingredients
  

  • 1/4 cup sugar
  • 3 cups celery hearts coarsely chopped, leaves removed
  • 1 cup cucumber coarsely chopped
  • 1/2 cup lime juice freshly squeezed
  • 12 ounces gin chilled
  • small celery stalks with leaves for garnish (optional)
  • thinly sliced cucumber for garnish (optional)

Instructions
 

  • Bring 1/4 cup water and sugar toboil in a small saucepan, stirring until sugar is dissolved. Let cool completely and then refrigerate, covered, at least one hour and up to a month.
  • Puree celery, cucumber and 1/2 cup simple syrup in a blender until smooth. Pour mixture through a fine-mesh sieve over a medium bowl.
  • In a cocktail pitcher, combine celery/cucumber syrup, lime juice and gin. Fill tumblers halfway with ice, pour 3 ounces of cocktail base into each glass. Top off with lime seltzer. Garnish with your choice of accompaniment.
